You are correct, the Peachtree check forms do not have the check at the bottom. But that doesn't matter, because PrintBoss is expecting the standard Peachtree check format and will then translate that format to the stub/stub/check i.e. bottom check prior to printing.
You can see how it works by looking at a sample Peachtree check included with the samples folder. Open PrintBoss by running Pb32 program. Go to 'Utilities' and choose 'Print Sample Documents.' Click on PT_AP4d and then 'Browse' and 'View'. You will see a sample PrintBoss check generated from Peachtree. Now RIGHT-click any where on the sample and choose the option 'View Raw Capture.' This will display the report as it is coming from Peachtree. You'll see that the raw - unformated - report has the check in the middle. When formated by PrintBoss the check moves to the bottom and prints in the stub/stub/check format.

I already looked at that it unfortunately it was no help. We have been through all of the forms that are listed on the forms screen in peachtree and there are no forms available that print the check on the bottom.

The best thing to do is to use the PrintBoss Installation Notes as a guide for setting up the PeachTree check forms.
You can find a copy of the Installation Notes in a couple of places:
1. In your PrintBoss folder: PrntBoss\Doc\Peach
2. For the latest version follow this link: Installation Notes for PeachTree

Print Boss was working correctly and overnight the check form that we had been using to print disappeared. How do we fix this?
