French Characters in Email Body

I have been using PrintBoss successfully up until recently for sending out invoices generated in Sage 300 ERP. An email body is attached to the invoice via Footer Objects in PrintBoss "{PBDir}\EMail\Body\filename.html". Working in New Brunswick, our forms and emails are in a bilingual format. Recently, the french characters in the email body that is referenced in the Footer Objects, have begun to appear incorrectly (Note: all accents on Invoice which is generated in Crystal Reports continue to appear correctly). In PrintBoss generated email body, the accented letters such as é are now appearing as i, à is appearing as ` and words such as l'addresse now appear as l?addresse. All english words in the email body appear correctly. We are running PrintBoss Enterprise Version 6.01.3 and using Office 365 (Outlook) for pushing out the emails. Why would this product quit working for us? Is PrintBoss aware of any Microsoft Updates that may have caused this to start happening? Is PrintBoss compatible with Outlook 2016? Where do I go for help? I have been told it is an Outlook setting issue - if it is, can you tell me the correct settings for Outlook 2016?
